extracts and such instead of syrups on my coffee bar

see, even though my coffee bar is built around budget equipment so i can’t make perfect espresso, i still make better stuff than most coffee shops… better beans, better water, better ice, and much less sugar… when the main ingredients are good, you don’t have to mask the flavor :)

anyway, i stock a dozen or so syrups on my bar… well, i often make unsweetened drinks – for instance my drink i call “mocha simplicity” is made with unsweetened cocoa powder and the flavor of the coffee is powerfully present as well as a deep, rich chocolate taste and i never miss the sugar…
well, i’ve had this idea for a long time of getting rid of all the syrups and just using extracts and oils… a vanilla latte with only pure vanilla extract, for instance… if you want it a bit sweeter, i make simple syrup from natural demarara cane sugar and it can be added in moderation… see, with syrups, if you want more vanilla flavor, you add more syrup – which means adding more sugar, too… well, with my idea, you could add more extract and not add to the sweetness…

at wal-mart yesterday, i picked up vanilla extract, cinnamon extract, and i already have peppermint extract and the unsweetened cocoa powder i mentioned…

so, i’ll begin experimenting… and i am open to suggestions…

"I started thinking, how was it possible to make quality espresso 50 years ago before these machines?How do people in less afluent countries make espresso at home where they cant afford 500+ in equipment?  Certainly a larger population in these countries enjoy espresso so anything made at home would have to be decent quality.I imagine they use some combination of a hand grinder and device that requires the water to be heated.  What are they using?The more I think about it, I probably would enjoy the hands on process and I’m not affraid of a learning curve or the extra steps that might be involved.   What should I look at?"
