My idea of keeping my sanity is singing along with every song on the radio in a Fred Schneider (B-52s) voice. You oughta’ hear it.

I have successfully adapted a metal filter to the siphon pot. I say the cloth filter absorbs more of the coffee oils than I prefer.

the metal filter I adapted to my siphon pot is from my moka – it’s a second that came with it to be put on top of the grounds for a half pot

The siphon coffee I made with the metal moka filter pretty much tastes like press – a suspicion I’d had. But, it was more fun to make ;)

Caveat: I am drinking it iced and did not try it hot yet. But, I think I’d be unable to decide in a blind taste test between this and press.

While the clean, clear look of siphon coffee is pleasing to the eye, it also *tastes* very clean. Too clean for my taste.

And for our beloved Irish coffee, siphon just isn’t the same – press or moka softens the whiskey bite and brings out all the best flavors.
